Actually, I would suggest you don't change the content type story to something else. Theoretically it should be possible, but in practice, I think unexpected things will break.
Would it be okay if you just change the label? For example, on the page .../admin/content/node-type/story, you can change the Name to Article (this is the human friendly name), but the Type remains as story.
